Shrimp and Spaghetti Squash: A Light and Savory Dish

Shrimp and Spaghetti Squash is a wonderful dish that brings together the natural sweetness of spaghetti squash with the savory flavors of shrimp.

The spaghetti squash provides a unique texture, resembling noodles, while the shrimp adds protein, making it a satisfying and delicious meal.

Ingredients:

200g Shrimp (peeled and deveined)

1 medium spaghetti squash (cut in half and seeds removed)

2 tablespoons olive oil (for cooking)

2 cloves garlic (minced)

1/4 teaspoon red pepper flakes (optional, for a bit of spice)

1/4 cup chicken broth (or vegetable broth)

1 tablespoon lemon juice

1/4 cup fresh parsley (chopped, for garnish)

Salt and pepper to taste

1/4 cup parmesan cheese (optional, for garnish)

Instructions:

Step 1: Roast the Spaghetti Squash

Preheat your oven to 400°F (200°C). Place the spaghetti squash halves on a baking sheet, cut side down. Roast in the oven for 30-40 minutes, or until the squash is tender and you can easily shred the flesh with a fork into spaghetti-like strands. Once done, remove from the oven and set aside.

Step 2: Cook the Shrimp

While the squash is roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove from the skillet and set aside.

Step 3: Sauté Garlic and Red Pepper Flakes

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant.

Step 4: Combine with Broth

Add the chicken broth to the skillet, stirring to combine, and let it simmer for 2-3 minutes, allowing the flavors to meld together.

Step 5: Add the Spaghetti Squash

Use a fork to scrape the flesh of the roasted spaghetti squash into strands, and add them to the skillet with the garlic and broth. Toss to coat the squash in the flavorful liquid.

Step 6: Add Shrimp and Finish

Return the cooked shrimp to the skillet and toss everything together. Drizzle with lemon juice, season with salt and pepper to taste, and stir until well combined.

Step 7: Serve

Serve the Shrimp and Spaghetti Squash hot, garnished with fresh chopped parsley and parmesan cheese, if desired.

Tips for the Perfect Shrimp and Spaghetti Squash:

Add Veggies: For more texture and nutrition, add sautéed spinach, tomatoes, or zucchini to the dish.

Make it Spicy: If you love spice, increase the amount of red pepper flakes or drizzle with a little chili oil.

Herbs and Cheese: Fresh basil or thyme can complement the flavors, and a sprinkle of feta or mozzarella can give a creamy touch.

Shrimp and Spaghetti Squash is a healthy, low-carb alternative to traditional pasta dishes, packed with flavor and nutrition. The shrimp are perfectly cooked, and the spaghetti squash gives a satisfying noodle-like texture, making it a great option for a light, yet filling meal. Enjoy!
