Shrimp and Artichoke Salad: A Fresh and Flavorful Dish

Shrimp and Artichoke Salad is a delightful salad featuring juicy shrimp paired with artichokes, a medley of fresh vegetables, and a tangy vinaigrette. The flavors come together in this light yet satisfying dish that’s both healthy and delicious.

Ingredients:

200g Shrimp (peeled and deveined)

1 can artichoke hearts (drained and quartered, or use fresh artichokes if preferred)

1 cucumber (sliced)

1/2 red onion (thinly sliced)

1 cup cherry tomatoes (halved)

1/4 cup Kalamata olives (pitted and halved)

2 tablespoons olive oil (for cooking shrimp)

1 tablespoon lemon juice (for dressing)

1 tablespoon red wine vinegar (for dressing)

1 teaspoon Dijon mustard (for dressing)

1 tablespoon fresh parsley (chopped, for garnish)

Salt and pepper to taste

Mixed greens (such as spinach or arugula, for the base)

Instructions:

Step 1: Cook the Shrimp

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Season with salt and pepper to taste. Remove from the skillet and set aside to cool slightly.

Step 2: Prepare the Salad Ingredients

While the shrimp are cooling, prepare the vegetables. Slice the cucumber, red onion, and cherry tomatoes, and halve the olives. Drain and quarter the artichoke hearts if using canned. If using fresh artichokes, steam or boil them until tender and cut them into quarters.

Step 3: Make the Dressing

In a small bowl, whisk together the lemon juice, red wine vinegar, Dijon mustard, and a pinch of salt and pepper. Slowly drizzle in the remaining 1 tablespoon of olive oil, whisking continuously until the dressing emulsifies and thickens slightly.

Step 4: Assemble the Salad

In a large bowl, combine the mixed greens, cucumber, red onion, cherry tomatoes, olives, and artichokes. Add the cooked shrimp on top.

Step 5: Dress and Serve

Pour the dressing over the salad and toss gently to coat all the ingredients evenly. Garnish with freshly chopped parsley and season with additional salt and pepper if needed.

Tips for the Perfect Shrimp and Artichoke Salad:

Add More Veggies: You can add other fresh veggies like bell peppers, avocados, or baby carrots for extra crunch and flavor.

For Extra Creaminess: Add a spoonful of Greek yogurt or sour cream to the dressing for a creamier texture.

Make it Spicy: If you like a bit of heat, add a pinch of red pepper flakes to the dressing or drizzle with some hot sauce.

Shrimp and Artichoke Salad is a vibrant and healthy dish that’s perfect for those who enjoy fresh, light meals. The combination of tender shrimp, artichokes, and tangy dressing makes this salad a refreshing and satisfying choice. Enjoy!
