Shrimp and Beet Salad
Shrimp and Beet Salad is a refreshing and nutrient-packed dish that balances the sweetness of roasted beets with the savory shrimp and tangy dressing. It’s perfect for a light lunch or as a side dish for dinner.
Ingredients:
200g Shrimp (peeled and deveined)
2 medium beets (roasted and sliced)
4 cups mixed greens (such as arugula, spinach, or baby kale)
1/4 cup feta cheese (crumbled, optional)
1/4 cup walnuts (toasted, optional)
1 tablespoon olive oil (for cooking shrimp)
1 tablespoon balsamic vinegar (for dressing)
1 tablespoon honey (for dressing)
1 teaspoon Dijon mustard (for dressing)
Salt and pepper to taste
Lemon wedges (for serving)
Instructions:
Step 1: Roast the Beets
Preheat the oven to 400°F (200°C). Wrap the beets in foil and place them on a baking sheet. Roast for about 45 minutes to 1 hour, or until they are tender when pierced with a fork. Once cooled, peel the beets and slice them into thin rounds. Set aside.
Step 2: Cook the Shrimp
While the beets are roasting, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Season with salt and pepper. Remove from the skillet and set aside.
Step 3: Prepare the Dressing
In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, and a pinch of salt and pepper. Slowly drizzle in olive oil while whisking, to create an emulsion. Taste and adjust seasoning if needed.
Step 4: Assemble the Salad
In a large bowl, combine the mixed greens, roasted beet slices, and cooked shrimp. Drizzle the dressing over the salad and toss gently to combine.
Step 5: Garnish and Serve
Top the salad with crumbled feta cheese and toasted walnuts for added texture and flavor. Serve with lemon wedges on the side for a fresh burst of citrus.
Tips for the Perfect Shrimp and Beet Salad:
Roast the Beets Ahead of Time: You can roast the beets in advance and store them in the refrigerator for up to 3 days to save time when preparing the salad.
Add More Veggies: Feel free to add extra veggies like cucumber, carrots, or avocado for a more filling salad.
Use a Different Nut: Swap the walnuts for almonds, pecans, or hazelnuts, depending on your preference.
Shrimp and Beet Salad is a beautiful, nutrient-dense dish that’s bursting with flavors and textures. The combination of sweet roasted beets, juicy shrimp, and a tangy dressing makes this salad a refreshing and satisfying meal. Enjoy!
