Shrimp and Farro Salad is a vibrant, filling salad that combines the chewy texture of farro with tender shrimp, fresh vegetables, and a tangy dressing. This dish is perfect as a light main course or as a side salad for any occasion.

Ingredients:

    200g Shrimp (peeled and deveined)

    1 cup farro (rinsed and drained)

    2 tablespoons olive oil (for cooking shrimp)

    1/2 red onion (thinly sliced)

    1 cucumber (diced)

    1 cup cherry tomatoes (halved)

    1/4 cup fresh parsley (chopped, for garnish)

    1/4 cup feta cheese (crumbled, optional)

    1 tablespoon lemon juice (for the dressing)

    1 tablespoon red wine vinegar (for the dressing)

    2 teaspoons Dijon mustard (for the dressing)

    3 tablespoons olive oil (for the dressing)

Instructions:

Step 1: Cook the Farro

In a medium pot, bring 3 cups of water to a boil. Add the farro and reduce the heat to a simmer. Cook for 25-30 minutes or until the farro is tender but still chewy. Drain any excess water and set aside to cool slightly.

Step 2: Cook the Shrimp

While the farro is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, until the shrimp turn pink and opaque. Remove from heat and set aside.
