Shrimp and Snow Peas: A Simple and Healthy Stir-Fry

Shrimp and Snow Peas is a healthy and satisfying stir-fry that’s packed with flavor and made in under 30 minutes.

The sweet, crisp snow peas add a wonderful crunch to the tender shrimp, and the savory sauce brings everything together. This dish is perfect for a quick weeknight dinner or a healthy lunch option.

Ingredients:

200g Shrimp (peeled and deveined)

1 tablespoon olive oil (or sesame oil for added flavor)

1/2 cup snow peas (trimmed)

1 tablespoon fresh ginger (minced)

2 cloves garlic (minced)

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce

1 tablespoon honey (or brown sugar)

1 teaspoon rice vinegar (or white vinegar)

1/2 teaspoon sesame oil (optional, for extra flavor)

1 tablespoon water (for thinning the sauce if needed)

1/4 teaspoon red pepper flakes (optional, for a little heat)

Sesame seeds (for garnish, optional)

Fresh cilantro (chopped, for garnish, optional)

Instructions:

Step 1: Cook the Shrimp

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Step 2: Sauté the Vegetables

In the same skillet, add the snow peas and cook for 2-3 minutes, stirring occasionally, until they are bright green and slightly tender but still crisp. Add the minced garlic and ginger and sauté for another 1 minute until fragrant.

Step 3: Make the Sauce

In a small bowl, whisk together the soy sauce, oyster sauce, honey, rice vinegar, and sesame oil (if using). If the sauce seems too thick, add a tablespoon of water to thin it out.

Step 4: Combine Shrimp and Snow Peas

Return the cooked shrimp to the skillet with the snow peas. Pour the sauce over the shrimp and peas, tossing everything together to coat evenly. Add the red pepper flakes (if using) and cook for another 1-2 minutes, allowing the sauce to thicken slightly.

Step 5: Serve

Serve the Shrimp and Snow Peas hot, garnished with sesame seeds and fresh cilantro if desired. This dish pairs wonderfully with steamed rice, quinoa, or even noodles.

Tips for the Perfect Shrimp and Snow Peas:

Add More Veggies: Feel free to add other vegetables such as bell peppers, mushrooms, or carrots to the stir-fry for extra flavor and color.

Spicy Version: To make it spicier, add more red pepper flakes or a splash of sriracha to the sauce.

Make it Gluten-Free: Use tamari instead of soy sauce to make this dish gluten-free.

Marinate the Shrimp: For extra flavor, marinate the shrimp in a little soy sauce, garlic, and ginger before cooking.

Shrimp and Snow Peas is a quick, healthy, and delicious stir-fry that’s perfect for busy nights. With a savory sauce and a great balance of textures, it’s sure to be a hit at the dinner table!
