Shrimp and Zucchini Noodles: A Fresh, Light Delight

Shrimp and Zucchini Noodles (also known as “zoodles”) is a healthy, gluten-free dish that combines the sweetness of shrimp with the freshness of zucchini noodles. Tossed with garlic, lemon, and herbs, this dish is perfect for anyone looking for a low-carb, satisfying meal.

Ingredients:

200g Shrimp (peeled and deveined)

2 medium zucchinis (spiralized into noodles)

2 tablespoons olive oil (for cooking shrimp and zucchini noodles)

2 cloves garlic (minced)

1 tablespoon lemon juice (for seasoning)

1/2 teaspoon chili flakes (optional, for a little heat)

Salt and pepper to taste

1 tablespoon fresh parsley (chopped, for garnish)

Lemon wedges (for serving)

Instructions:

Step 1: Prepare the Zucchini Noodles

Spiralize the zucchinis into noodles using a spiralizer or a vegetable peeler. Set the zucchini noodles aside on a paper towel to remove excess moisture.

Step 2: Cook the Shrimp

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Season with salt, pepper, and chili flakes (if using). Remove from the skillet and set aside.

Step 3: Sauté the Zucchini Noodles

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 30 seconds, until fragrant. Add the zucchini noodles and sauté for 2-3 minutes, just until they are tender but still al dente. Be careful not to overcook, as they can become soggy. Season with salt and pepper to taste.

Step 4: Combine the Shrimp and Zoodles

Once the zucchini noodles are cooked, add the shrimp back into the skillet. Toss together, then drizzle with lemon juice and stir to combine.

Step 5: Garnish and Serve

Serve the shrimp and zucchini noodles in bowls, garnished with fresh parsley and lemon wedges for added freshness.

Tips for the Perfect Shrimp and Zucchini Noodles:

Add More Veggies: You can mix in other veggies like cherry tomatoes, spinach, or bell peppers for extra color and flavor.

Make it Creamy: For a creamier dish, add a spoonful of cream cheese or Greek yogurt into the noodles after cooking.

Add Some Heat: If you like spice, you can add more chili flakes or drizzle with hot sauce.

Shrimp and Zucchini Noodles is a fresh, light dish that’s packed with flavor. The shrimp pairs perfectly with the crisp zucchini noodles for a satisfying, healthy meal. Enjoy!
