Ingredients

  • 1 pound (450g) shrimp, peeled and deveined
  • 8 oz (225g) spaghetti or fettuccine
  • 4 oz (110g) pancetta or bacon, diced
  • 2 cloves garlic, minced
  • 3 large eggs
  • 1 cup grated Parmesan cheese, plus extra for serving
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

How to Make Shrimp Carbonara

Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Prepare the Shrimp:

While the pasta is cooking, heat a large skillet over medium heat. Add diced pancetta or bacon and cook until crispy, about 5-7 minutes.

Remove the crispy pancetta or bacon from the skillet and set aside on a paper towel-lined plate.

In the same skillet with the rendered fat, add the peeled and deveined shrimp. Cook for 2-3 minutes per side, or until the shrimp are pink and cooked through. Remove from heat and set aside.

Make the Carbonara Sauce:

In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with salt and black pepper to taste.

Assemble the Dish:

Return the drained pasta to the pot (off the heat). Immediately pour the egg and cheese mixture over the hot pasta, stirring quickly and continuously to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce.

If the sauce seems too thick, gradually add some of the reserved pasta cooking water, a tablespoon at a time, until the desired consistency is reached.

Combine with Shrimp and Pancetta/Bacon:

Add the cooked shrimp and crispy pancetta or bacon to the pasta. Gently toss to combine, ensuring the shrimp and pancetta/bacon are evenly distributed throughout the pasta.

Serve:

Divide the Shrimp Carbonara among serving plates or bowls.

Garnish with additional grated Parmesan cheese and chopped fresh parsley.

Chef’s Note

Traditional Carbonara is made with raw eggs that are cooked by the heat of the pasta, creating a creamy sauce. It’s important to mix the egg and Parmesan cheese mixture quickly with the hot pasta to avoid scrambling the eggs. Adjust the consistency of the sauce with pasta cooking water as needed. For added flavor, you can stir in a splash of white wine or lemon juice into the sauce before combining with the pasta and shrimp.
