Shrimp Florentine: A Creamy, Savory Delight

Shrimp Florentine is a rich and flavorful dish that combines shrimp with a creamy spinach sauce, often served over pasta or rice.

The dish is inspired by the classic “Florentine” style, which typically involves spinach and a creamy sauce. This easy-to-make recipe delivers a satisfying, restaurant-quality meal in the comfort of your home.

Ingredients:

200g Shrimp (peeled and deveined)

2 tablespoons olive oil (for cooking the shrimp)

2 cloves garlic (minced)

1/2 cup white wine (optional)

2 cups fresh spinach (washed and roughly chopped)

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1/2 teaspoon nutmeg (optional, for added depth of flavor)

Salt and pepper to taste

1 tablespoon butter

1 tablespoon fresh lemon juice (optional, for a fresh zing)

1 tablespoon fresh parsley (chopped, for garnish)

Instructions:

Step 1: Cook the Shrimp

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until they turn pink and are fully cooked. Season with salt and pepper. Remove the shrimp from the skillet and set them aside.

Step 2: Sauté the Garlic and Spinach

In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter melts, add the minced garlic and sauté for about 1 minute until fragrant. Add the spinach and cook for 2-3 minutes until wilted. Season with salt and pepper.

Step 3: Make the Creamy Sauce

Once the spinach has wilted, pour in the white wine (if using) and let it simmer for 2 minutes to reduce. Then, add the heavy cream and bring the mixture to a simmer. Let it cook for 3-4 minutes, allowing the sauce to thicken slightly. Stir in the grated Parmesan cheese and a pinch of nutmeg (if using). Adjust seasoning with salt and pepper to taste.

Step 4: Combine the Shrimp with the Sauce

Return the cooked shrimp to the skillet and toss them gently in the creamy spinach sauce. Let everything cook together for an additional 1-2 minutes to ensure the shrimp are heated through.

Step 5: Serve

Serve the Shrimp Florentine immediately, garnished with fresh parsley and a squeeze of lemon juice if desired. You can serve it over pasta, rice, or even on its own as a low-carb option.

Tips for the Perfect Shrimp Florentine:

Add More Veggies: For extra flavor and nutrition, you can add mushrooms, sun-dried tomatoes, or artichoke hearts to the sauce.

Pasta Options: Pair this dish with linguine, spaghetti, or fettuccine for a more traditional presentation. You can also serve it with cauliflower rice for a low-carb alternative.

Cheese Variations: You can substitute Parmesan with Gruyère or Pecorino Romano for a different cheese flavor.

Shrimp Florentine is a comforting and creamy dish that’s perfect for a cozy dinner. The combination of succulent shrimp, tender spinach, and the rich cream sauce makes this dish feel indulgent, yet it’s surprisingly easy to make. Whether you serve it over pasta or on its own, it’s sure to become a favorite!
