Ingredients:

200g Shrimp (peeled and deveined)

1 tablespoon olive oil

1 clove garlic (minced)

1/2 teaspoon ginger (freshly grated)

1 tablespoon soy sauce

1 tablespoon honey (or maple syrup for a lighter option)

1 teaspoon rice vinegar

1/4 cup carrots (julienned)

1/4 cup cucumber (julienned)

1/4 cup red bell pepper (thinly sliced)

1/4 cup green onions (chopped)

1 tablespoon cilantro (chopped, for garnish)

1 tablespoon sesame seeds (optional, for garnish)

1 head of butter lettuce (or iceberg lettuce, for cups)

Instructions:

Step 1: Prepare the Shrimp

Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, until they turn pink and are fully cooked. Once done, remove the shrimp from the skillet and set them aside.

Step 2: Make the Sauce

In the same skillet, add the garlic and ginger and sauté for 30 seconds, until fragrant. Then add the soy sauce, honey, and rice vinegar, stirring to combine. Let the sauce simmer for about 1-2 minutes, allowing it to thicken slightly.

Step 3: Combine the Shrimp with the Sauce

Return the cooked shrimp to the skillet and toss them in the sauce for 1-2 minutes until they are evenly coated with the sweet and savory mixture. Remove from heat and set aside.

Step 4: Prepare the Lettuce Cups

Carefully separate the lettuce leaves from the head of lettuce, making sure to keep them whole so they can be used as cups. Wash and dry the leaves thoroughly.

Step 5: Assemble the Shrimp Lettuce Cups

Place the lettuce cups on a serving plate. Spoon a small amount of the shrimp mixture into the center of each lettuce leaf. Top with julienned carrots, cucumber, and red bell pepper slices. Garnish with green onions, fresh cilantro, and sesame seeds for an extra touch of flavor and crunch.

Step 6: Serve

Serve the Shrimp Lettuce Cups immediately as a fresh and light meal. Enjoy them as a low-carb appetizer or a refreshing lunch!

Tips for the Perfect Shrimp Lettuce Cups:

Crunchy Add-ins: You can add more crunchy veggies, such as shredded cabbage or water chestnuts, for extra texture.

Spicy Kick: If you like spice, add a bit of sriracha or red pepper flakes to the sauce for some heat.

Protein Variations: Substitute the shrimp with chicken, tofu, or even ground turkey for a different take on this dish.

Shrimp Lettuce Cups are a healthy, refreshing, and easy-to-make meal that delivers a burst of fresh flavors in every bite. Whether you’re looking for a light dinner or a fun appetizer, these lettuce cups are sure to impress your guests or satisfy your cravings!
