1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/4 teaspoon chili powder (optional, for heat)

Salt and pepper to taste

2 cups tortilla chips (your choice of brand)

1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)

1/2 cup black beans (drained and rinsed)

1/4 cup corn kernels (optional, for added sweetness)

1/4 red onion (finely chopped)

1/2 avocado (sliced)

1/4 cup sour cream or Greek yogurt (for topping)

Fresh cilantro (chopped, for garnish)

Lime wedges (for serving)

Hot sauce (optional, for extra heat)

Instructions:

Step 1: Cook the Shrimp

In a bowl, season the shrimp with paprika, cumin, garlic powder, chili powder, salt, and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp to the skillet and cook for 2-3 minutes per side, until the shrimp turn pink and are fully cooked. Remove from heat and set aside.

Step 2: Prepare the Nacho Base

Preheat your oven to 375°F (190°C). On a baking sheet, spread out the tortilla chips in a single layer. Make sure there is enough room for the chips to crisp up and not be overcrowded.

Step 3: Assemble the Nachos

Sprinkle the shredded cheese evenly over the tortilla chips. Next, add the cooked shrimp, black beans, corn kernels (if using), and chopped red onion on top of the cheese.

Step 4: Bake the Nachos

Place the baking sheet in the preheated oven and bake for about 5-7 minutes, or until the cheese is melted and bubbly, and the chips are golden and crispy.

Step 5: Add the Toppings

Once the nachos are out of the oven, top them with slices of avocado, a dollop of sour cream or Greek yogurt, fresh cilantro, and a squeeze of lime juice. If you like it spicy, drizzle with hot sauce.

Step 6: Serve

Serve the Shrimp Nachos immediately with extra lime wedges and hot sauce on the side for dipping. Enjoy with your favorite drink or as a fun snack for friends and family!

Tips for the Perfect Shrimp Nachos:

Customize the Toppings: Feel free to add more toppings like diced tomatoes, jalapeños, or pickled onions for extra flavor.

Make it Spicy: Add some chopped jalapeños or drizzle with extra hot sauce if you like your nachos with a bit more heat.

Extra Crunch: For extra crunch, bake the chips a little longer, but be careful not to burn them.

Make Ahead: You can cook the shrimp and prepare your toppings in advance, then assemble and bake the nachos when you’re ready to eat.

Shrimp Nachos are a fun and tasty way to enjoy shrimp in a completely different way. With layers of cheese, shrimp, and all your favorite toppings, these nachos are sure to be a crowd-pleaser. Perfect for sharing or devouring on your own! Enjoy!
